Diabetic Fruit Cake

Ingredients:

  • 1/2 cup figs
  • 1/2 cup dates
  • 1/2 cup prunes
  • 1 cup crushed pineapple
  • 1 cup raisins
  • 2 cups chopped apples
  • 1/2 cup walnuts
  • Advertisement

  • 1/2 cup orange juice
  • 2 cups whole wheat flour
  • 1/2 cup wheat germ, toasted
  • 1 Tbsp. baking powder
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 eggs

Directions:

Combine all fruit, juice, and nuts. Stir well. Mix in remaining ingredients, stirring well, and pour into a well greased 10 inch Bundt pan. Put into a preheated 350 degree F oven for 40-50 minutes.

Note: 1/15 of cake has 193 calories! This freezes well too and the flavors will blend.

Thank you so much for posting this recipe. I have a lot of friends who are diabetic and want their treats. This will make a perfect Xmas gift.
