Ingredients

  • 1 cup water
  • 1 cup sugar
  • 2 cups vinegar
  • pinch salt

Directions

Boil and pour over beets and seal in jars.

I have always used this old recipe & works great1 cup water, 1 cup vinegar, 1 cup sugar, !/2 to 1 teaspoon salt, boil & pour over beets in sterilized jars. Almost the same but the 1 cup of vinegar difference would be too much, the 1 Cup is perfect.

Hello,
Hoping someone has a suggestion for me. I processed 6 qts fresh beets in hot water bath. Gave a qt to a friend without tasting them myself. Got curious as to how they turned out & discovered that I used way too much vinegar and they are almost inedible.

I've tried rinsing them several times and sprinkled a little sugar but they're not very good. What would you do? I have 4 qt left and not sure what to do, don't want to dump them, too much work!
