Green Bean and Olive Salad

You only really need four ingredients for this one and it's super easy :-) It makes a huge amount of salad for less than $5.00! Walgreens has a sale once a month for the olives (89 cents per jar with in store coupon, limit three so I stock up) and markets always have sales on canned green beans for less than a dollar. Lettuce and onion combined are currently under three dollars.

Did I mention you don't really need a salad dressing for this one? Plenty of flavorings are built in but you could add a tad of extra virgin olive oil to coat lettuce and onion if desired ;-)

Ingredients:

  • 1 (15 oz.) can green beans, drained
  • 1 (7 oz.) jar pimento stuffed green olives, with liquid
  • 1/2 red onion, thinly sliced
  • 1 head iceberg lettuce, torn
  • Extra virgin olive oil to coat if desired

Directions:

Place the green beans, olives and olive juice in a medium bowl. Pour in the olives and liquid. Cover and marinate at least 1 hour, stirring occasionally. Toss lettuce and onions together in a large bowl. Toss with olive oil if desired. Top with marinated beans and olives, toss and serve.
