Healthy Concession Stand Food Ideas?

What are some good ideas for selling food at a concession stand? Does anyone have any ideas for healthier food too? I am also looking for unique ideas.

As far as healthy homemade: One of the best things I've ever eaten at a Street Fair was an "ice cream" that was made with ONLY frozen fruit & berries & nothing else... Mostly frozen bananas with other fruit &/or berries were added. What they did was use a juicer that wasn't a spinning centrifuge type. (I think it was a "Champion" brand Juicer) Next, they just put frozen fruit into the juicer & it came out looking like sorbet & they put it into small paper cup. They kept the fruit frozen in a cooler with dry ice. Tasty Stuff!

Other healthy foods are small zip-lock bags full of dried fruit, healthy muffins & nonfat cookies. Along with REAL fruit & veggie juice including wheat-grass juice. Also dried cranberries, home made granola (It Super-easy to make!)

As far as store bought: Fruit roll, dried cranberries, fruit, real juice & granola bars. You can also make air-popped popcorn & this has no fat & hardly any calories, just good-for-you fiber. My kids liked to sprinkle nutritional yeast on top of theirs, you can also sprinkle on parmesan cheese or even just salt... Also, sometimes you can find people who make & sell healthy treats at Saturday Markets & maybe you could contract them to make healthy treats for you. In my state, it's not legal to cook in your own kitchen & sell the food. You have to rent a kitchen that's been licensed by the health department.

A food item sold on Italy beaches:
narrow slices of COCONUT , ready to eat, with the hard shell removed.
They were juicy and delicious .

Have you tried "Walking tacos". Here is how to make them
Have a individual pack of Fritos. Crush in bag. Open and put a couple spoons of taco seasoned meat in it, little lettuce, grated cheese, Put a plastic fork in and customers are off to eat it.

We offered chopped onion, tomatoe and taco sauce if people wanted to add it.

Try apples with caramel. They are a big hit at our basketball concession stand.

Vegetarian burgers, veg. hot dogs, veg. "chicken", frozen yogurt, nuts, and smoothies made with fresh fruit are a few off the top of my head.

Update: I'm no longer a fan of PeTA, but this will give you some more concession stand ideas:

At my grandson's baseball games they sold pickles, then took the pickle juice and froze it in little paper cups with 1/2 a popsicle stick, and sold them for 25 cents. They sold out every time, and even the grownups were eating them. It takes a long time to freeze (a couple) of days but everyone loved them.

Popcorn is full of fiber and is a good snack choice. The smell draws a crowd while its popping!

Consider burgers and chicken sandwiches replacing the buns with lettuce. Lettuce also can replace tortillas for wraps, burritos and tacos.
