Chuck Wagon Biscuits

This might be the easiest bread of all times. Probably close to that eaten on the pioneer trails by the old "49'ers" of gold rush fame. It's also a good thing to know how to make bread of some kind since we never know when we're going to have to learn to do more things for ourselves with a lot less to do it with.

Ingredients:

  • 2 cups store-bought self-rising flour (or make your own SR flour)
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 1/2 cups warm water
  • 4 Tbsp. bacon grease (or Mazola corn oil or olive oil). My campers liked the flavor of bacon grease best, of course, since they were eating thick-sliced bacon already)
  • Bacon grease or oil for skillet as needed.

Directions:

Mix all dry ingredients in large bowl. Add the warm water and bacon grease or oil of choice.

Drop by heaping tablespoon into skillet over a medium-low fire. Use grease or oil as needed, about 2-3 teaspoons at a time.

Cover and allow to bake on top of the stove for about 5 minutes. Turn, cover, and allow to bake until done, about 5-6 more minutes.

Serve on metal pie pans with baked beans and/or Grub Gravy for a real Chuck Wagon Meal. They are also delicious split and spread with a mixture of peanut butter and syrup which is the dessert of choice on all camping trips with my family.

Source: Ran out of milk one day and tried making pancakes without it. One thing led to another and Voila! Chuck Wagon Biscuits. I have an idea I wasn't the first one to find them either.

Sounds great. Am anxious to try it and I won't be waiting until I am outdoors. Will be great way to keep kitchen cool. I am also interested in the grub gravy.

Pookarina, I thought you might like to know that
we tried these chuck wagon biscuits last weekend
while camping. I used butter instead of the oils

or bacon grease, and the only prep I really did at home
was to cut the cold butter into the dry ingredients so
that I wouldn't have to take along my pastry blender.
I used 1/2 cup canned evaporated
milk with 1 cup of water, and baked them in a cast
iron dutch oven over an open fire.

We will be using these biscuits on every camping
trip from now on. They were delicious. Next time,
I'm going to try making them a little larger so that
there isn't as much crust.
