Baked Eggs with Cheese Tomatoes and Basil for Two

You will need two ramekins or other similar sized oven proof bowls and a baking sheet for this recipe. I've made these eggs with sharp cheddar, pepper jack and parmesan and all three ways were yummy. The next time I make these I am trying crumbled feta cheese ;-)

Ingredients:

  • Butter for greasing
  • 10 cherry tomatoes, halved, divided and lightly sprinkled with salt, if desired
  • 1/2 cup cheese of your choice, finely shredded and divided
  • 4 eggs
  • 4 large fresh basil leaves, chopped and divided for garnish

Directions:

Pre-heat the oven to 375 degrees F.

Grease each of the ramekins with butter.

Sprinkle cheese in to the bottom of the ramekins, top cheese with tomatoes and crack two eggs in to each ramekin.

Place ramekins on a cooking sheet and then in to the oven on the center rack.

Cook until the egg whites just turn white, about 15 minutes or so but start checking after 10 minutes.

Remove from oven, sprinkle eggs with basil and serve.
