Minty Fruit Kabobs

These delicious fruit kabobs are a great healthy snack.

Ingredients:

  • 1 can pineapple chunks, in juice (20oz)
  • 1/3 cup honey
  • 2 Tbsp. orange juice
    Advertisement

  • 1 Tbsp. lemon juice
  • 2 tsp. snipped fresh mint
  • 2 medium size red apples, cut into bite-size cubes
  • 3 cup whole strawberries
  • 1 package dried apricot halves
  • 16 wooden skewers

Directions:

Drain pineapple, reserving 1/2 cup juice. In 9x13 inch baking dish, combine reserved pineapple juice, honey, orange juice, lemon juice and mint; stir until well mixed. Thread apple cube, pineapple chunk, strawberry, and apricot half onto each skewer. Arrange skewers in baking dish and brush generously with juice mixture. Cover and refrigerate 2 hours, turning and brushing with juice mixture occasionally. Drain off excess liquid before serving.
