Cook the rice as usual but add a little more water so that the rice becomes softer. Then add sugar, cinnamon or nutmeg to taste. Add enough milk (evaporated is really good) to make it to the texture you like and you have an easy rice pudding. Maybe not as creamy as regular rice pudding, but faster and still pretty tasty. You could also add raisins or other dried fruit to the rice while it is cooking.

RICE PUDDING (never fail)

1 c. rice
2 1/2 qt. water
1/2 tsp. salt
Put in a large pot and cook 25 minutes. Drain and wash rice in cold water. Shake until dry. Put back in large pot and add: 1 quart milk plus one cup evaporated milk

1 c. sugar
2 lg. or 3 sm. eggs
2 T. cornstarch
Beat the above ingredients until blended well. Heat milk and rice mixture until warm, not hot. While stirring, add the egg and sugar liquid to warm milk.

Cook until thick, stirring constantly. Add vanilla to taste. Top with cinnamon. Refrigerate.
