Cardamom Recipes?

I have 2 spice jars of CARDAMOM that I need to use up. I have googled for a few recipes but was wondering if anyone had any family favorites that uses cardamom (ground). Cookies, coffee cake, muffins, quick breads... something along those lines.

Cardamom is one of my favorite spices to use for my apple pie! It will be a taste test as it all depends on what kind of apples one uses! I also made an apple pie jam and used cardamom in it!

That is a common spice used in Scandanavian baking. You might google for Swedish, Danish or Norwegian recipes.

Ever made chai tea? YUM! I like it with sugar too.

Ingredients
3qt water
1tbsp fresh grated ginger
1tsp black peppercorns
5 cardamom pods, broken open

1 sticks cinnamon
1t whole cloves
Instructions
Place all ingredients into a 4 quart pot, cover and simmer on low for at least an hour. Try not to let it boil. You may dip into it as early as 20 minutes, but the longer it simmers the better.

Excellent when done in the crock pot, too.

To make with black tea, turn off burner and add a bag or two of good quality darjeeling tea, let steep for 10 minutes or to taste and remove bag.

Ladle the tea into a big mug (through a strainer if need be), add honey, milk (optional), and sip slowly.

Wards off colds, I'm tellin' you. Mom making this for us at night is one of my earliest memories. Major comfort food

This is a very yummy recipe from my sister in law. I am planning on using it for Christmas gifts this year.

Recipe Name: Chai Tea Mix
Difficulty: Easy

Preparation Time: 1-10 Minutes

Ingredients:
1 Cup(s) dry milk
1 Cup(s) powdered creamer
1 Cup(s) vanilla creamer(powdered)
1 1/2 Cup(s) sugar (superfine)
1/2 Cup(s) instant tea
2 Teaspoon(s) ginger
2 Teaspoon(s) cinnamon
1 Teaspoon(s) cloves
1 Teaspoon(s) cardamom

Optional Ingredients:
1/4 Teaspoon(s) white pepper
1 Teaspoon(s) allspice
1 Teaspoon(s) nutmeg
Directions:
Put all ingredients into a blender a half a cup at a time to blend to powder. A food processor may also be used. To make the recipe healthier, you may use fat free or sugar free creamers as well as splenda instead of sugar. Mix in warm milk or soy milk to taste.

CARDAMON COOKIES

2 1/4 C FLOUR
1/4 C SUGAR
2 t SODA
1/4 t SALT
1 T CARDAMON
1/2 t CINNAMON
1/4/t GINGER
1/2 C OIL
1/4 C MOLASSES
1/4 C MAPLE SYRUP

1 EGG
BEAT AT LOW SPEED TILL BLENDED. ROLL INTO BALLS. PLACE 2 " APART ON UNGREASED COOKIE SHEET. BAKE @350 FOR 10 MINS.

Instant Chai Tea
1 cup nonfat dry milk powder
1 cup powdered non-dairy creamer
1 cup French vanilla flavored powdered non-dairy creamer
2 1/2 cups white sugar
1 1/2 cups unsweetened instant tea
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground cardamom
In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.

To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps.

I gave out jars of this for Christmas presents last year and they were a big hit!

How about St. Lucia cookies and or buns? They are Swedish like laniegirl said. Try them, very good

I added about 1/2 Tbsp of cardamom to the last pineapple upside-down cake that I made - it was wonderful!

I add cardamom to my apple pies as well. It's also great with pears (epicurious.com has a wonderful pear galette recipe, to which I add cardamom).

I use it on my oatmeal along with a little numeg, butter and chopped walnuts. Tasts like a danish!
