Cranberry Salad

Ingredients:

  • 1 (3 oz.) pkg. cherry or strawberry gelatin
  • 1 cup hot water
  • 1/2 cup cold water
  • 1/2 lb. cranberries
  • 3 apples
  • 2 oranges or 1/2 cup crushed pineapple
  • 1/4 cup nuts, chopped
  • 3/4 cup sugar

Directions:

Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside. Wash and grind cranberries. Pare and chop apples into small chunks. Stir together the ground cranberries, chopped apples and oranges (or pineapple), nuts and sugar. Add to slightly thickened gelatin mixture; pour into a mold and chill until salad is firm and holds it's shape. Unmold on salad greens.

Great for holidays time or any time.

Ingredients:

  • 1 lb. mini marshmallows
  • 1 pint whipping cream, whipped
  • 1 1/2 cups sugar
  • 1 (regular size) can crushed pineapple, drained
  • Advertisement

  • 1 lb. cranberries, ground

Directions:

Mix cranberries and sugar, and let stand about 20 minutes. Add remaining ingredients and mix. Refrigerate overnight.

Servings: 18-20

Ingredients:

  • 1 quart cranberries
  • 2 cups apples (when ground)
  • 1/2 cup chopped nuts
  • 1 lb. marshmallows
  • 1 cup sugar
  • 2 cups whipped cream

Directions:

Grind cranberries; add chopped marshmallows and sugar. Let stand several hours. Add ground apples, chopped nuts and whipped cream. Mix well and let stand overnight.

Ingredients:

  • 1 lb. cranberries
  • 2 small cans crushed pineapple
  • 1 pkg. marshmallows
  • 1 pint cream, whipped

Directions:

Grind cranberries. Cut marshmallows into 5 or 6 pieces. Add pineapple and let stand overnight in refrigerator. Next day whip cream and add to first mixture. Chill.

Ingredients:

  • 4 cups whole cranberries
  • 2 cups sugar
  • 1 cup chopped English walnuts or pecans
  • 2 cups water
  • 2 cups crushed pineapple
  • 2 pkgs. lemon gelatin (3oz. size)

Directions:

Boil sugar and water for 5 minutes. Add cranberries and cook until they burst. Remove from heat and add gelatin, stirring until dissolved. Add pineapple and nuts. Turn into 2 quart mold. Chill until firm.

Ingredients:

  • 1 lb. ground raw cranberries
  • 2 cup ground, unpared apples
  • 2 cup sugar
  • 1 pkg. lemon gelatin (3oz.)
  • 1 pkg. orange gelatin (3oz.)
  • 2 cup boiling water
  • 1 can crushed pineapple (reg. size)
  • 1/2 cup nut meats

Directions:

Sprinkle the 2 cups sugar over the ground cranberries and apples and let stand one hour. Dissolve lemon gelatin and the orange gelatin in 2 cups boiling water and add the cranberry mixture. To this add crushed pineapple and nut meats. Chill until set in a large bowl. This serves 20.

Ingredients

  • 2 cups sugar
  • 1 cup warm water
  • 2 1/2 Tbsp. unflavored gelatin soaked in 1/2 cup cold water
  • 4 cups raw, ground cranberries
  • 1 medium orange with rind, chopped
  • 1 cup chopped celery
  • 1 cup chopped nuts (your choice)

Directions

Cook sugar and 1 cup water to make thin syrup. Add gelatin mixture, stirring till dissolved. Add remaining ingredients. Pour in mold and chill.

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup sugar
  • 1 3/4 cups cranberry juice cocktail
  • 2 Tbsp. lemon juice
  • 1 cup chopped unpeeled apple
  • 1/2 cup chopped celery
  • 1 pkg. cream cheese, softened (3oz.)
  • 1/2 cup finely chopped pecans
  • 1/2 cup applesauce
  • 1/2 cup sour cream
  • 1/2 cup salad dressing - (like Miracle Whip)

  • 1 tsp. celery seed

Directions

Combine gelatin, sugar and 3/4 cup cranberry juice in large saucepan. Cook over low heat until gelatin dissolves, stirring constantly. Stir in lemon juice and remaining 1 cup cranberry juice. Chill until partially set. Add apple and celery. Cut cream cheese into 1/2 inch cubes and shape into balls. Roll in pecans. Fold into gelatin mixture. Pour into 3 cup mold. Chill until firm. Unmold on serving platter lined with salad greens. Combine remaining ingredients in small bowl. Chill until serving time. Serve over gelatin mold.
