Does anyone know where I can collect copper wire within Edinburgh? I intend to make crafts and art from it and to also build skill capacity for the community.

Here in the U.S. we can sometimes get lucky at some construction or demolition sites. Asking permission first of course.
Have you checked your local home improvement store in the electrical section? Depending on the gauge you want there is copper wire inside of extension cords.
