Cook Fish in Chicken Broth

Instead of cooking fish in butter, use a little chicken broth. It is less fattening.

I have been poaching my fish in chicken stock for years and it's great. To keep it low cal and to boost the flavor - add some fresh lemon juice, chopped onions or some fresh herbs. When I feel like it, I also add some white wine and/or butter, or a scoop of pesto. After the fish is cooked, you can remove it and put in a mix of cornstarch/water to thicken it up so you have a little sauce.
