Butternut Pound Cake and Frosting

Very easy to make, very good

Ingredients:

Cake:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup self-rising flour
  • 1 cup Crisco (or shortening of your choice)

  • 4 eggs
  • 2 cups sugar
  • 1 Tbsp. butternut flavoring
  • 1 cup milk (I use half evaporated, half water for rich taste)

Frosting:

  • 1 box powdered sugar
  • 1/2 cup Crisco
  • 1 Tbsp. butternut flavoring
  • 1 Tbsp. milk, or enough to make frosting a good spreading consistency

Directions:

Cake: Preheat oven to 325 degrees F. Grease and flour tube or bundt pan. Beat shortening and sugar until creamy; add eggs, one at a time. Sift flours together and add alternately with milk, beating well after each addition. Add flavoring and mix well. (I mix the flavoring and milk together). Pour batter into pan and bake for 60 minutes at 325 degrees F. and then turn oven up to 350 degrees F and bake 10 minutes more.

Frosting: Cream all ingredients together with electric mixer and spread on cooled cake. Use more milk if frosting is too stiff.

Where can I find the butternut flavoring? I have seen and bought" Vanilla butter and nut " flavoring, Is that the same thing?

I have a copy of my grandmother's Butternut Cake and Icing (as she called it, not frosting). My Mother has made the cake for many years, but now we can no longer find the Butternut flavoring.

I live in Alabama, so if anyone knows of a grocery common to the South that carries the flavoring I would lilke to know. Thanks.

My family is from Alabama, too. A Christmas "Butternut cake" is a tradition for us! I have found the flavorings on Amazon.com. Expensive, but worth it to make a traditional cake!
