1 pkg cream cheese
1 can refried beans
1 jar of salsa
1 bag of shredded cheese
1 6X11 pan, or something approximate to that size

Spread cream cheese on bottom of pan, follow with beans. Dump salsa on the beans and then the shredded cheese. Bake at 350 for 15 minutes. Sometimes we add extra stuff, like a layer of hamburger or top it with black olives. Quick and easy and everyone always enjoys this.

Start with a layer of thin white tortilla chips that either are no-salt or low-salt. The thinner they are, the crispier they will get. Layer them up about 3 deep so that you have the base of a 10x15 jelley roll pan pretty well covered. Line the pan with foil for easy clean-up!

Heat a can of refried beans and dollop on the top.

If you want you can then add either taco-style ground beef, shredded beef, or taco-seasoned chicken.

Next layer we like to add the chopped green chiles that come in a can. Some people like canned or fresh jalepenos, anaheim chiles, etc. Whatever your heat-level likes.

Then cover with shredded cheese - cheddar, monterey jack, mexican white, or a mixture of all three.

I like to bake them in the oven so they heat through, but if your meat and beans are warm already you can put them under the broiler until the cheese starts to bubble.

After you remove them from the oven, add shredded lettuce, tomatoes, black olives, etc. and serve.

This is one of our favorite Friday night meals and you can vary the ingredients however you like. Enjoy!

1-12oz. roll breakfast sausage
1-lb. ground beef
1 carton Velveeta Cheese Spread
1 large Bottle Pace Picante Sauce
Tortilla chips

Brown sausage, and beef in a skillet, drain any drippings. Transfer to a large saucepot, keep on low heat. Cube entire pkg. of Velveeta, add it to the meat mixture, stir till melted, add the entire jar of Pace Picante Sauce, stir constantly over low heat till hot. Remove from heat, pour into a serving dish, and serve with torilla chips.

To crisp store bought chips, spread evenly onto a cookie sheet, put into a 350 degree oven for 5-10 minutes.
