Mama C's Upside Down Three Layer Casserole

It's quick and easy to make, yet a hearty family favorite. Perfect for a cold winter day.

Ingredients:

  • 2 Tbsp. olive oil
  • 1 medium onion (diced)

  • 3 cloves garlic (diced)
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 large can refrigerated biscuits
  • 1 1/2 lbs ground beef
  • 1 can diced potatoes
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 3 oz. cheddar cheese (shredded)

Directions:

Heat olive oil on medium, add onions and garlic. Saute until onions are soft and slightly brown. Add salt and pepper.

While onions and garlic are cooking, place biscuits in a 9x13 inch pan side to side and end to end. Connect biscuits by pressing edges together until the bottom of pan is completely covered. Bake at 350 degrees F. until golden brown.

Add ground beef to onions and garlic mix well and cook until browned.

Add diced potatoes, mix well.

Add cream of mushroom soup, mix well and cook 2 minutes.

Add milk mix well and cook 2 minutes.

Pour mixture on top of biscuits.

Sprinkle cheddar cheese evenly on top of mixture.

Bake until cheese is melted. Serve.
