Steaming Tortillas

While making fajitas, soft tacos, or burritos, place flour tortillas on a wire cooling rack over the simmering skillet. The steam makes tortillas elastic longer than heating in the microwave. They will also absorb some of the flavor of the simmering meat and veggies. Be sure to flip the tortillas at least once.

This morning, while preparing eggs and nopales, I draped a small whole wheat flour tortilla over a long handled spoon positioned across the top of the pan. Softened up nicely. Was thinking about getting the steaming pan down, but came up with this one instead.

What a good idea! This would also work to steam hotdog/hamburger buns while they are cooking. Thanks!

This is a good idea. I hate how doughy tortillas are out of the bag. I usually toast mine by laying them directly on my range top for a few seconds until bread begins to "inflate" a little, then turn with a metal spatula.

However, steamed - a la Taco Bell - yum.
