Fresh Apple Cake

Ingredients

  • 1 cup sugar
  • 1/2 cup margarine
  • 1 cup milk
  • 1 tsp. soda
  • 1 1/2 tsp. salt
  • 2 cups apples, finely chopped
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon

Directions

Cream sugars and margarine, then stir in eggs. Add sifted dry ingredients alternately with the milk. Add chopped apples. Pour into a greased and floured 9x13 inch baking pan. Sprinkle the top with a mixture of 1/3 cup sugar, 1 teaspoon cinnamon and 1/4 cup chopped nuts. Bake at 325 degrees F for 45 minutes or until center tests done.

Ingredients

  • 3 cups flour
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 3 cups peeled, finely chopped apples
  • 1 cup finely chopped nuts

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 tsp. vanilla

Directions

Sift into large bowl the flour, cinnamon, salt, and baking soda. Mix into flour mixture the apples and nuts; set aside. Beat eggs, 1 at a time, and sugar until fluffy. Add oil and beat well. Add vanilla. Stir into dry ingredients; blend well. Batter will be stiff. Pour into greased and floured tube or Bundt pan. Bake at 350 degrees F for 1 hour and 15 minutes.

Ingredients

  • 2 cups sliced apples
  • 1 cup flour
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 cup sugar
  • 1/2 cup nuts
  • 1 tsp. soda in small amount of warm water
Sauce
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 stick margarine
  • 2 heaping Tbsp. flour
  • 1 cup water

Directions

Mix apples and sugar. Let stand until juicy. Add remaining ingredients. place in 9x9 inch pan and bake 40 minutes at 350 degrees F.

For sauce: cook sugars, flour, and water until clear. Add margarine. Put on cake while still medium hot.

Ingredients:

  • 4-5 apples, peeled and finely chopped (Macintosh)
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 2 Tbsp. butter, melted

Sift together:

  • 2 cups AP flour
  • 2 tsp. baking soda

Add:

  • 1 cup sugar
  • 3/4 cup Mazola corn oil
  • 3 eggs, beaten
  • 1/3 cup lemon juice
  • 1 tsp. vanilla

Mix and allow to sit for at least 2 hours.

Mix well, and pour half of batter into a greased and floured
bundt cake pan. Spoon the reserved apple mixture over the batter spreading evenly, then add the remaining batter.

Bake in preheated 350 degree F oven for 45 minutes, test for doneness. When done, turn out onto wire rack and allow to sit until cool. Serve with whipped cream which has been slightly sweetened and has a sprinkling of cinnamon added to it.

Ingredients:

  • 1 3/4 cups sugar
  • 1 1/2 cups oil
  • 1 tsp. vanilla
  • 2 eggs
  • 2 1/2 cups flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. soda
  • 3 cups chopped apples
  • 1/2 cup coconut (opt.)
  • 1/2 cup chopped nuts (opt.)

Directions:

Cream together sugar, oil, eggs and vanilla. Beat well. Then add rest of ingredients. Pour into 9x13 inch pan. Bake at 350 degrees F for 1 hour.

Topping Ingredients:

  • 1 cup brown sugar
  • 1 1/2 Tbsp. cornstarch
  • 1 Tbsp. margarine
  • 3/4 cup water

Topping Directions:

Stir all together and cook until it's thick or until it looks clear. Put on cake immediately. Cake may still be warm.
