Meatball-Zucchini Heroes

Some evenings I don't feel like cooking or eating a full meal, so I make these heroes which are more than filling and delicious. The instructions below are for the full recipe. I use only the amount I want for the time being.

  1. Heat a little olive oil in a large saucepan over medium heat. Cut 1 medium zucchini into thin rounds. Add to pan with a 12-oz. package refrigerated, fully cooked Italian sausage meatballs. Cook 2 minutes. Add 2 cups marinara sauce. Simmer, covered, 3 minutes until hot.
  2. Heat broiler. Cut a long loaf Italian bread in quarters; (I use the Hoagie rolls) partially split each in half; open like a book. Spoon on meatball mixture. Sprinkle each hero with 1/4 cup shredded Italian cheese blend. Broil just until cheese melts.

Source: If packaged Italian meatballs cannot be found, as sometimes happens, I buy the Italian sausages and remove the sausage from the skins and make my own meatballs.

Thanks again, Connie. I'll be trying this soon. Another substitution for the meatballs is to take some Healthy Choice sausage (Kielbasa or similar), slice it into a food processor with steel blades inserted, grind it and then proceed with the meatball "construction." This makes this dish a bit healthier and is every bit as good.
