Butterscotch Chip Cookie Recipe?

Does anyone have a recipe for butterscotch chip cookies. The ones I can find are either the same as chocolate chip cookies or combine different chips.

My favorite cookie recipe for butterscotch chips is making a basic oatmeal cookie, and adding the butterscotch chips. Come to think of it, I need to bake some before Christmas. Oatmeal Scotchies they called them.

Here's one I found that is NOT the basic cookie recipe from a bag of the chips. I found it on About.com: Southern Food - southernfood.about.com/.../bl50215i.htm

This recipe is more of an actual butterscotch cookie. You melt the morsels with other ingredients and mix it all in with the flour. I'd add additional butterscotch chips when mixing the dough all up.

BUTTERSCOTCH BITES

INGREDIENTS:

1 package (8 ounces) butterscotch morsels
5 tablespoons butter
1/4 cup sugar
1/4 cup corn syrup
1 egg
1 teaspoon vanilla extract
2 cups sifted flour
1 teaspoon baking soda
1/4 teaspoon salt
pecan halves

PREPARATION:

In a saucepan, combine butterscotch morsels, butter, sugar, and corn syrup. Place over medium heat, stirring, until melted. Cool for 5 minutes. Beat in egg and vanilla. Sift together the flour, baking soda, and salt; stir into the dry ingredients, mixing well.

Drop cookie dough by teaspoonfuls onto lightly greased baking sheets or silpat pad. Press a pecan half into the center of each. Bake at 350° for 8 to 10 minutes. Makes 5 to 6 dozen cookies.

MY NOTES: Can also mix in additional butterscotch chips or add some chocolate chips if desired.

Cookies really cook better when you cook them on top of parchment paper that is placed over the cookie sheet.

Ok, I dug a little more and found another one on About.com - REAL homemade SCRATCH Butterscotch cookies - NOT using butterscotch chips...the secret is the brown sugar and butter. That is what makes it 'butterscotch'. It calls for using walnuts - but I added on 'or pecans' as I think pecans go better with this type of cookie dough. Nuts are optional of course. I'm going to make these this weekend!

BUTTERSCOTCH COOKIES SCRATCH

These butterscotch icebox cookies are chilled in a loaf pan, then cut and baked.

INGREDIENTS:

1/2 cup butter or margarine, softened
1 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup coarsely chopped walnuts or pecans

PREPARATION:

In a mixing bowl, cream butter and brown sugar well. Add egg and vanilla; beat until smooth and creamy. Mix flour and baking soda; stir into the creamed mixture. Add walnuts, mixing with hands if too thick for a spoon.

Pack dough in 9x5x3-inch loaf pan lined with waxed paper. Chill overnight. Turn dough out of pan and slice about 1/4-thick; place on ungreased cookie sheets. Bake in 400° oven for about 8 minutes. Makes about 3 dozen butterscotch cookies.

For an added treat, go ahead and mix in some actual butterscotch chips.
