Date Christmas Cake

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup flour
  • 2 tsp. baking powder
  • 1 lb. English walnuts
  • 1 lb. dates
  • 1/4 lb. candied cherries
  • Advertisement

  • 1/4 lb. candied pineapple

Directions

Chop fruit. Break nuts into pieces (not too small). Roll fruit and nuts in flour, which has been sifted with baking powder. Beat eggs and sugar until thick, then add to fruit and nuts. Bake in an angel food pan or 2 loaf bread pans, greased. Bake in slow oven at 275 degrees F for 1 1/2 hours or longer until cake is golden brown on top. Let stand until perfectly cold before removing from pan.

This sounds like my kind of cake Robin. The magic word here is "dates"... We love the wonderful dried fruits like dates, figs etc. and try to use them any way possible. I'll make this cake.

Hello, does this taste like Christmas fruitcake? By the way I love fruitcake, as I grew up with it even enjoying it as my wedding cake. My British grandma made the cake as she did for so many of her grandchildren. My mom and one sister still make them.;-)

Your cakes sounds wonderful. I'm not too fond of pineapple so might substitute golden raisins. Thanks for posting the recipe.
