Plum Pudding

Really is very good!

Ingredients:

  • 12 plums, pitted and halved
  • 1 cup white sugar
  • 1/2 cup water
  • 2 Tbsp. tapioca
  • 1/2 tsp. ground cinnamon
  • 2 1/4 cups all-purpose baking mix
  • 3 Tbsp. white sugar
  • 2/3 cup milk
  • 3 Tbsp. margarine, melted

Directions:

Preheat oven to 350 degrees F (175 degrees C). In a 2 quart baking dish, stir together plums, 1 cup sugar, water, tapioca, and cinnamon. Bake in preheated oven for 25 minutes. (Or 15 minutes in microwave.)

Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, stir together baking mix, 3 tablespoons sugar, milk, and melted margarine to form a shortcake dough. Drop dough by spoonfuls onto baked plum mixture. Bake in preheated oven 10 minutes, until golden brown. Let cool slightly before serving.

Ingredients

  • 1 lb. raisins
  • 2 cups ground suet
  • 2 cups sugar
  • 2 cups bread crumbs
  • 2 cups flour
  • 1 Tbsp. salt
  • 1 Tbsp. cinnamon
  • 1 Tbsp. cloves
  • 1/2 cup molasses
  • 1 Tbsp. baking soda
  • 1 jar cherry preserves
  • 1 pt. pecans
  • 4 eggs
  • 1/2 cup milk

Directions

Mix and pour into 3 coffee tins (not closer than 1 1/2 inch to top). Cover tins with foil and put in large covered pan with 1 inch water. Steam for 2-3 hours. Test with toothpick. Refrigerate in can until ready to use. Remove bottom of can to serve.

Ingredients:

  • 1 cup flour
  • 1/3 cup ground suet
  • 2 eggs (slightly beaten)
  • 1/2 cup milk
  • 1/2 cup cut raisins
  • 1/2 cup currants (cut)
  • 1/3 cup molasses
  • 1/4 tsp. ginger
  • 1/2 tsp. salt
  • 1/2 cup chopped citron
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon

Directions:

Stir all the dry ingredients together. Add the citron, currants, raisins, and suet which have been mixed with a little flour. Add beaten eggs and flavoring; beat thoroughly. Pour into well greased mold. Steam 2-3 hours. Serve warm with sauce. NOTE: To steam, put hot water in large kettle or a roaster with a tight fitting lid. Place mold in the water. Cover. Keep the water at an even temperature. Stick with a straw or toothpick to test for doneness.

Sauce:

  • 1 cup sugar
  • 1 cup boiling water
  • 1 Tbsp. cornstarch
  • 3/4 cup butter
  • 1 tsp. vanilla (strong)

Directions:

Dissolve cornstarch in a little cold water. Cream sugar and butter. Add boiling water to the sugar and butter. Stir. Add the cornstarch mixture slowly and while stirring. Cook in double boiler to the right consistency. Add vanilla.

Simple Plum Pudding

Robin, this sounds like a really good recipe but I have to ask: where the heck are the plums? Seems to me if it wants to call itself a "Plum Pudding Recipe", it should at least display a few plums. This is like a pecan pie recipe that doesn't call for pecans, or a strawberry shortcake recipe that doesn't call for strawberries. What's up with that? (12/15/2004)
