Broiled Cheesy Tomatoes

A nice little lunch or dinner side dish but I like these for breakfast with a soft boiled egg too.

Ingredients:

  • 1 large firm tomato, cut into 1/4 inch slices
  • Advertisement

  • salt and pepper to taste
  • 1 tsp. extra virgin olive oil, plus 1 tsp.
  • 1/4 cup Parmesan cheese, grated or finely shredded
  • 2 Tbsp. aged Asiago cheese, grated or finely shredded (Romano if you like a sharper flavor)
  • 2 Tbsp. Panko bread crumbs
  • 1 Tbsp. dried parsley

Directions:

Preheat oven broiler. Place tomato slices in a single layer on a baking sheet, season with salt and pepper, and drizzle with 1 teaspoon olive oil.

Mix together the Parmesan cheese, Asiago or Romano cheese, Panko and parsley, evenly sprinkle over the tomato slices and drizzle the remaining 1 teaspoon olive oil over the top.

Broil for 5 minutes or until the top is golden and toasty but check at the 2 minute mark because some broilers do their work faster than others.
