Super Special Salmon Patties

This recipe tastes like a little bite of heaven! It's also very healthy - the fish is full of omega-3s, and the canola oil is heart-healthy. I believe substituting Ritz crackers for the usual saltines is what gives the dish its extra-special flavor. I've also used bran flakes in a pinch, but it wasn't THIS good, lol! Makes 10-12 patties.

Ingredients:

  • 2 cans salmon, drained (you can substitute mackerel, but salmon has a finer texture)
  • 3 eggs
  • Approximately 1 sleeve Ritz crackers, crushed (generic is fine)
  • 1 onion, diced
  • Splash of milk, perhaps 1/4 cup
  • Canola oil to cover bottom of skillet for frying

Directions:

In large mixing bowl, thoroughly blend by hand, first five ingredients. (I literally use my hand to mix - messy, but it works better for me). Adjust proportions of milk and crackers as needed. You want a very moist mixture, but one that will hold together to form good patties. A little more milk makes mix lighter.

Preheat oil over medium heat until a drop of water sizzles when dropped in.

Form hamburger-sized patties, flatten. Smaller patties work and make more, if you prefer. Fry until golden brown on the outside and cooked through. (Sorry, I don't have a time estimate, hubby did this step.)

Serve hot with your choice of side dishes. Enjoy!

Canned salmon is always "wild" too, never farm-grown, so you'll be getting the best fish possible when you use the
canned salmon. Unless things have recently changed, this is still true.

Jo, your recipe sounds wonderful, and even though I've made salmon cakes forever and we had them about once a week when I was growing up, I've never used Ritz crackers in my mixture.

things made with Ritz better than plain saltines, so it sounds like a really good idea.

Ritz crackers huh? Sounds like a good substitute for the saltines so I'll give them a try.
I think I'd like these fish patties made with salmon, tuna or jack mackeral. Now, I'm wondering if the mackeral is wild too. Probably is since it used to be a more economical canned fish.

I am going to definitely give this a try JPJ! I don't have any canned salmon on hand and no extra food money for almost two weeks but do have the Ritz crackers and other ingredients and some Albacore tuna in a pouch. Do you think that Albacore would work as well?

Deeli, I've never thought to try making tuna patties, but of course you can try it. Let us all know how it turns out, k?
And Pookarina, I'd forgotten about the dietary benefits of salmon until I was watching Sunday House Call on the Fox News Channel last Sunday. Deeli, just FYI, tuna is a wild fish and packed with omega 3s too.

Jo. I was waiting for this recipe.I also love Ritz crackers instead of plain old saltines. I think Ritz has less salt than saltines. I have the tuna on hand but will pick up some salmon on next months shopping trip. I can't wait to make these. Thanks for sharing. :)

This sounds really good; I love salmon patties. I'm going to have to change the recipe somehow because I'm the only one who will be eating these.

I love fish, almost any kind, but especially, I like the canned fish as it's so easy and so many ways of preparing a nutritious meal with it. Your "Super Duper Salmon Patties" sound delicious.

I will often just open a can of Salmon or Tuna, drain it, and (I do take the skin and bone away from salmon), then just dump them into macaroni salad for a very healthy and hearty meal. Also, on a bed of lettuce with quartered tomato, cucumber slices and anything else you want to add for the best lunch. I make a dressing to sprinkle over it and serve it with party rye bread.

I can't wait to try your salmon patties with Ritz crackers added. It has to be good, I'm sure, since it has onions in it (as my husband would say).

If ever I get stuck for what to cook, I just have to come to ThriftyFun, and take all my ideas from here. Brunswick Stew for tonight and tomorrow, so maybe we'll have your Salmon Cakes for Friday evening.

I have my own recipe for mackeral patties (never buy salmon, too expensive!), but I'm definitely going to try the Ritz crackers. Those sound really yummy. Also, I form my patties and bake them on a lightly greased baking sheet. My husband actually gets the job of mixing as he has superior upper body strength and makes it into a spectacular paste. The patties themselves bake for 30 to 45 min at 350 degrees F until gently browned and come out with a fluffy texture inside and crispy outside. Baking cuts down the fat content a lot and we have to cut back on that since we are fat as butter!

TX Betty, if you use one can of fish, two eggs, and half an onion, that should halve the recipe. I've never tried freezing them. I generally reheat and eat a couple patties for a quick and easy lunch. I don't even bother with condiments or bread. Call me lazy!

I use mayonnaise instead of eggs in mine. Adds a little more flavor. Baking sounds cool too. Don't make them often since I hate standing by the stove WAITING. Prolly helthier too. My grand daughter & I have always eaten salmon right out of the can since she was 3 yrs old
