Cut both ends out of an empty, clean tuna can. Spray with cooking spray, place on a skillet, hold down and fill with a beaten egg. You can add diced ham, cheese, vegetables, etc. Cook on low-med heat until firm. Run a knife around inside edges of can to loosen the egg, and remove can. Flip egg over to cook other side. Serve as a sandwich ("Egg McMuffin") using toast, English muffin, or homemade biscuit.

We have some eggs in our refrigerator that I want to use up before we go on vacation. I was planning on scambled eggs and sausage for supper this tonight. But I'm going to try your recipe instead.

Where do you get tuna cans with two removable ends anymore? All the ones I have have that rounded bottom that can't be opened with a can opener.

I haven't seen a tuna can that had two sides you could cut
in a very long time. Most have the rounded bottom!

I recently made some again but couldnt find my can rings I had so I cooked the eggs in the microwave in the bottom of a (microwave safe) coffee cup. The cup needs to be pretty wide on the bottom or they turn out too tall for my liking.

I think a custard cup or small ramekin would work as well. I sprayed it with a quick shot of non-stick spray and it comes right out if you turn the mug upside down.

Dollar stores, Big Lots, Dollar General, etc... often sell un-name brand tuna and chicken in cans with 2 bottoms.
