Snow Ball Cookies

Very easy to make, and they add so much to an assortment of pretty cookies to share or enjoy yourself. Delicious with hot unsweetened tea or coffee.

Ingredients:

  • 1/2 cup corn oil
  • 1 1/4 cups quick-cooking oatmeal
  • 1/2 cup applesauce
  • 1 white or yellow boxed cake mix
  • 2 Tbsp. all-purpose flour
  • 2 large eggs, slightly beaten
  • 2 tsp. vanilla or 1 tsp. orange extract (My own favorite)
  • 2/3 cup finely chopped walnuts or pecans
  • powdered sugar

Directions:

Heat oven to 350 degrees F.

Combine oil, applesauce, and oats. Let stand about 10 minutes. Stir in slightly beaten eggs, then vanilla (or other flavoring). Mix until well-blended.

Sift cake mix and flour together. Add half the cake mix-flour mixture to the wet ingredients, and stir in, then add the remaining half and stir until it's all mixed it. Fold in nuts.

Cover and cool in refrigerator for an hour or more.

Form into 1-inch balls and place about 2 inches apart on ungreased cookie sheet. (I still like to use parchment paper)

Bake 8 minutes or until set. Cool on cookie sheet 1 minute. Remove cookies to cooling rack.

Roll in powdered sugar while still slightly warm. Repeat if you want them to be more snowy white.

Source: The original recipe most likely came from the food section of a Thursday's St. Petersburg Times newspaper somewhere around 1965. They would always publish so many great recipes during the Thanksgiving and Christmas Holidays. My 3 daughters and I must have collected over a hundred recipes from them over a ten year period. Many we changed to suit our family, but some were cooked or baked just as they were published. The newspaper's Food Editor was wonderful and must have been a fabulous cook.
