Busy Day Tomato Rice Supper

This is a tomato/meat mixture served over rice that makes a total meal. It is quick, easy, and economical. I first made it when I got home late one day and needed to fix something quick with whatever was on hand. My husband is a hearty eater and finds this meal filling and delicious.

Ingredients:

  • 1 (15 oz.) can petite diced tomatoes, any flavor (Mexican, Italian, etc.)
  • 1 small can tomato sauce
  • 1 or 2 medium to large onions (depending on how well you like onions)
  • 1 chicken breast (or an equivalent amount of pork or beef)
  • Very small amount of oil
  • 1 1/2 cups uncooked rice

Directions:

Cook rice according to package directions.

While rice is cooking, cut chicken into small to medium bite size pieces and slice onions. Brown meat and onions in oiled skillet. Add tomatoes and tomato sauce and simmer until rice is cooked. Serve tomato/meat mixture over rice and enjoy.

I don't add any additional seasoning. The seasonings and spices in the various flavors of diced tomatoes is all that is needed.
