Southwest Meatloaf

Ingredients
  • 1 cup bottled barbecue sauce
  • 2 tsp. ground chile pepper
  • 1 tsp. ground cumin
  • 3 lbs. lean ground beef
  • 1 cup plain dry bread crumbs
  • 1 cup shredded Mexican cheese blend
  • 1 cup chopped green chilies
  • 2 eggs
  • 1/2 cup chopped scallions, about 2 scallions
  • 1/4 cup chopped fresh cilantro + additional
  • Advertisement

  • 1 tsp. salt

Directions

Preheat oven to 350 degrees F. Combine barbecue sauce, chili pepper and cumin. In large bowl combine 1/2 cup barbecue sauce mixture with beef, bread crumbs, 1/2 cup cheese, chilies, eggs, scallions, cilantro and salt.

In roasting pan shape into loaf. Spread with remaining barbecue sauce mixture. Bake 1 hour.. Sprinkle meatloaf with remaining cheese. Bake 15 minutes or until cheese is melted and meatloaf is no longer pink inside. Wrap and refrigerate 1/3 of meatloaf. Serve remaining meatloaf sprinkled with cilantro.

I just love this recipe. Using part of the meatloaf for chili is an excellent idea. My family think it is great and delicious.
