Stuffed Meatloaf

Ingredients:

• 1 lb. ground turkey
• 1 cup dry bread crumbs
• 1/2 cup grated carrot
• 1/4 cup finely chopped onion
• 2 eggs, beaten
• 1/2 cup milk

• 2 tsp. salt
• 1/8 tsp. pepper
• 2 Tbsp. butter

Stuffing:

• 2 cup soft bread crumbs
• 1 Tbsp. chopped parsley
• 1/2 tsp. poultry seasoning
• 1/4 tsp. salt

Directions:

Mix together ground turkey, bread crumbs, carrots, onion, eggs and butter. Add milk, salt and pepper. Mix lightly but well. Put some of meat mixture in bottom of baking dish. Then put stuffing on top. Then place rest of meat over stuffing. Bake at 350 degrees F for 1 hour or until done.
