Harvesting Green Onions

Gardening season will soon be upon us. If you like the green part of green onions, harvest them when they are still fairly small and thin, about 6 inches tall. They will be very tender and delicious. In addition, don't pull them up by the roots. Instead, use a sharp knife to cut them off about 1/2 inch above the ground. They will grow again, and it won't take quite as long as when you first started them from sets. This decreases the number of sets you need to buy. They are real good chopped and served as a garnish, too.

Source: My mother always had a plate of fresh picked veggies on the dinner table in the summer, and it always included green onions cut when small and tender.
