Banoffe Pie

Ingredients
  • Pie Crust
  • 1 can sweetened condensed milk.
  • 3 bananas
  • Cool whip

Directions

Got this from my wonderful sis-in-law Laura. Unbeatable!

Use any one of your favorite pie crusts, I prefer graham cracker crust.

Remove the label from the can of condensed milk. Do open the can. Take the can and stick it in a pot. Cover it with water. Put the pot on a stove and turn up the heat. When boiling, let the pot and can simmer gently for about two hours. Add more water to the pan, as necessary, when the level boils down too much.

When it's done, let it cool for a while and use a hot pad.

The resulting product should be colored tan or brown.

Once it has been boiled for 2 hrs. it becomes like toffee. Slice 3 bananas and put them in the pie crust open the can of "toffee" and pour on bananas. Top with cool whip and serve warm. So good, very rich. Love it!

Did you mean to say "Do open the can" or did you mean to say "do NOT open the can" (before covering with water and simmering for 2 hours)?

Hi Grandma Margie,
I looked at several similar recipes before publishing this. DO NOT OPEN the can. It cooks in the unopened can and turns into a toffee sauce. One recipe I found recommended if the can looked like it was bulging or deforming to poke a tiny hole in the can but then make sure the water was low enough that it would not get inside the can.

The recipe I have says to boil the unopened can for 5 hours instead of 2 and you do NOT open the can at all until it has completely cooled down. Failure to do so can cause a huge explosion in your kitchen!!
