Bread Crumb Cookies

Save your breadcumbs! This recipe (adapted from The Tightwad Gazette) won my children ribbons at the county fair when they were preschoolers.

Breadcrumbs

Cut the crusts off sandwiches and cube them. Save crumbs from the bottom of the bread bag. Freeze them all.

Pop them in the blender or Cuisinart and get ready for some amazing cookies!

Ingredients

  • 1 1/4 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/3 cup baking cocoa
  • 1 1/4 cups sugar
  • 1/2 cup milk
  • 1 egg
  • 1 1/2 tsp. vanilla
  • 2/3 cup butter or margarine *
  • 2 cups breadcrumbs

Instructions

Preheat oven 350 degrees F. Melt butter or margarine and allow to cool. Sift flour, salt, baking powder, cocoa, and sugar. Combine milk, egg, and vanilla. Add to dry mixture. Mix. Add melted margarine or butter and breadcrumbs. Mix well.

Drop by spoonfuls onto ungreased cookie sheet. Bake 15 minutes or until done.

* NOTE: OK to substitute 1/3 cup butter or margarine + 1/3 cup applesauce

You mentioned Cuisinart. Did you mean a cuisinart blender OR food processor? The only cuisinart appliance I have is a coffee maker but do need to buy either a blender or food processor

Anything that can chop enough to make chunks of bread into crumbs. =D

Anything that will chop chunks into crumbs. I use a Cuisinart blender-type food processor (yard sale score). Something with blades?

Or you can hand-crumble / fine dice the breadcrumbs while you wait for a blender to appear on Freecycle. Hope this helps!
