What's your favorite crockpot recipe?

I know there are lots of past crock pot recipes posted on here, but does anyone have some favorites they would like to sharet?

About.com has a gazillion great crockpot recipes. Here is one of my favs; layer in order given
1 lrg onion sliced
2 peppers, any color sliced
6 to eight boneless, skinless chicken breasts or thighs
1 jar chunky salsa,
6 to 8 on high, 8 to 10 on low, serve over rice.

My family loves roast beef, but I've done this with chicken & pork. Put the meat in the crock pot. Pour 1/2 can of beer & 1 cup or so of water over it. Sprinkle a whole package of powdered onion soup mix over that. Don't add any salt! There's plenty in the soup mix. Optional--mushrooms, either canned, dried or fresh. Cook on low for 6 to 8 hours depending on the type of meat you have, beef takes longer.

You can make your gravy with the drippings, wither the usual way, or by mixing some cream of mushroom soup to a thickness you like. pour the rest of the beer in a zip lock back or whatever you want to freeze it in and use it for the next time you need it. The beer doesn't have to be fresh to use it because it isn't the alcohol you want, it's the flavor of the hops & malt.

The gravy is good, there is just enough flavor from the hops & malt to give it a unique taste. If you do this to corned beef, don't add the onion soup mix. Also, my brother in law marinades his steak in beer and nothing else when he grills, it's pretty good that way.

Here's a super easy recipe that my husband loves.

BBQ Beef

Ingredients:

3 - 5 lb roast beef
1 medium onion
1 - 15 oz can tomato sauce
1 - bottle bbq sauce, your favorite

1 cup water

Put onion in the bottom of your crockpot. Put your roast beef on top of the onions. Mix together in a bowl, the water, tomato and bbq sauces. Pour over beef. Cover and cook all day, 6 - 8 hours.

When fully cooked, remove meat from crockpot and slightly cool. Take 2 forks and shred beef. Return meat to crockpot and mix with the sauce and onions. Keep warm in crockpot until serving time.

Serve on buns, or over rice.

Other possibilities: Use taco or spaghetti sauce, instead of the bbq sauce. Serve on buns, over rice or noodles.

I have to agree with using beer as a marinade. I usually pour one beer over a steak, and refrigerate. Turn a couple times, depending on when you plan to bbq. The beer breaks down the fibers in the meat, and tenderizes it.

Pour the beer down the drain, when you're ready to bbq. The alcohol burns off, and doesn't give a taste to the meat.

TNT: Chicken Merlot with Mushrooms
Source: simple & delicious May-June08

5-1/4 C sliced fresh mushrooms
1 C chooped onion
2 t minced garlic
3 lbs boneless skinless chicken thighs
1 can (6oz) tomato paste
3/4 C chicken broth
1/4 C Merlot wine or additional chicken broth
2 T quick cooking tapioca
2 t sugar
1-1/2 t dried basil
1/2 t salt
1/4 t pepper

Place the mushrooms, onion and garlic in a 5qt slow cooker, top with chicken.
In a small bow, combine the tomato paste, broth, wine or additional broth, tapioca, sugar, basil, salt and pepper. Pour over chicken. Cover and cook on low for 5-6 hours or until the chicken is tender.

This was very good. I used sliced baby portabellas for the mushrooms and did use the quick cooking tapioca...I wouldn't waste my money getting it again, it didn't work. I took the chicken out and thickend the sauce with starch and water.

But this is a very good recipe. I would serve to company any time.

Here is one that is super easy and great on a cold day!

Homey Ham and Green Beans

Place 6 cubed potatoes in the bottom of crockpot (peeled or unpeeled)
Next a whole bag of 16 oz frozen green beans
Sprinkle with salt and pepper and a little garlic powder
Finish by placing ham (slices, or butt)on top.

Cook on low all day. Or high until potatoes are cooked through. When you get home or when you are ready to eat just give it a stir. The beans add the liquid and the ham adds the amazing flavor and its so cheap!! I like to serve this with a good mustard (for dipping ham into opt) buttered biscuits and applesauce. Enjoy!!

CROCKPOT ANGEL CHICKEN

6 boneless chicken breasts
one half cup butter
1 pkg dry Italian salad dressing mix
1 can golden mushroom soup
one half cup white wine
4 oz. onion and chive cream cheese

Pkg angel hair pasta (cook according to box)

Place chicken in crockpot. In saucepan melt butter. Stir in Italian salad dressing mix, soup, cream cheese and wine. Pour over chicken. Cook on low for 4-5 hours. Pour over cooked angel hair pasta or any kind of noodle you desire. (Rice works well also).

I GOT THIS RECIPE FROM TASTE OF HOME.(I THINK) THIS IS A GREAT POTLUCK DISH OR HOLIDAY DISH. MY FAMILY ALWAYS INSIST THAT I BRING THIS. I HAVE SHARED THIS DISH WITH SOOO MANY PEOPLE. THEY ALL LOVE IT AND I'M SURE YOU WILL TOO.

CHEESY CREAM CORN

3 PACKAGES OF FROZEN NIBLET CORN
1 8-OZ AND 1 3-OZ OF CREAM CHEESE
6 SLICES OF AMERICAN CHEESE
3 TBS WATER
3 TBS MILK
3 TBS SUGAR
1/2 STICK OF BUTTER

ADD ALL INGREDIENTS TO CROCK POT. CUBE YOUR CHEESES SO THEY MELT EVENLY. COOK ON LOW FOR 4 TO 5 HOURS. STIR OFTEN. I HAVE DONE THIS FOR QUICK SERVE ON THE STOVE BUT WATCH CLOSELY SO THAT IT DOESN'T SCORCH. YOU CAN 1/3 THE RECIPE INGREDIENTS FOR A ONE FAMIY SERVING.

Slow Cooker Chicken Taco Soup
INGREDIENTS

* 1 onion, chopped
* 1 (16 ounce) can chili beans
* 1 (15 ounce) can black beans
* 1 (15 ounce) can whole kernel corn, drained
* 1 (8 ounce) can tomato sauce
* 1 (12 fluid ounce) can or bottle beer
* 2 (10 ounce) cans diced tomatoes with green chilies, undrained
* 1 (1.25 ounce) package taco seasoning
* 3 whole skinless, boneless chicken breasts
* shredded Cheddar cheese (optional)
* sour cream (optional)
* crushed tortilla chips (optional)


DIRECTIONS

1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

I found this on allrecipes.com and it was really good. I used chicken broth because I can't have beer (gluten intolerant) I also only used 1/2 package of taco seasoning because I don't like my thing very salty or hot. I made the whole recipe and then froze some of it for later use since there are only two of us.

Easy Round Steak

Cut round steak into single serving size, about 3-4" square. Into crock pot put one can beef gravy and one can tomato soup (regular size of 13oz or so for both)--mix together. Add beef and cook on low 6-8 hours. Add onion slices and a can of mushrooms too if desired. Serve with noodles or rice.

I call it the 3 2 1 Crock Pot Roast

Roast any size, what ever will fit in you crockpot
3 cups of beef broth, any thing you have on hand, I
usually use oxo and water
2 pkgs. of dry onion soup mix
1 can of pepsi or coke

That's it cook on low for @ 6-7 hours, high 3&frac;-4 hrs.
That is the original recipe, but you can add any other spices you want. All I add extra is crushed garlic.
The smell of this cooking is so good.

Cube Steak for two! Put two cube steaks in the crock pot with two cups of water. Cut up half a large white onion and put the rings over the cube steak. Cook on high for 4 hours. Mix 1 pkg of onion, mushroom and brown gravy packets all together in a bowl with a 1/2 cup of water. Pour over the cube steaks and let simmer on high for 30 more minutes. Done! These are so good with mashed potatoes. Yummy!

My sweetie who never really cared for ribs loves this very easy one also. Take pork ribs, 1 bottle of your favorite bbq sauce, and one can of pineapple chunks drained, Cook on low for about 6 hours, Remove meat, skim fat and thicken gravy with a little cornstarch mixed with the juice of the pineapple chunks. Serve over white rice. Easy and yummy!
