Oven Fried Potatoes

Ingredients:

  • 1/2 cup vegetable oil
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/4 tsp. pepper
  • 8 large baking potatoes, each cut into 8 wedges

Directions:

Mix ingredients and brush over potatoes which have been placed in shallow baking pan. Bake at 375 degrees F for approximately 45 minutes. Brush potato wedges occasionally with oil mixture.

Ingredients

  • 4 lb. potatoes (about 2 lbs.) scrubbed, but not peeled
  • 1/4 cup canola oil
  • 1 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder

  • 1/4 tsp. paprika
  • 1/8 tsp. pepper

Directions

Heat oven to 375 degrees F. Cut each potato lengthwise into 4 or 6 pieces. Mix oil and spices in small bowl. Place a layer of potatoes in pan and brush with oil/spice mixture. Repeat layering and brushing spices on potatoes until all is complete. Bake 45 minutes or until potatoes pierced with a fork become tender.

Ingredients

  • 5 lb. red or new potatoes
  • 6-8 slices bacon
  • 1-2 onions

Directions

Boil 5 pounds red or new potatoes with jackets on. Cool completely before slicing. Slice in a 3 qt. slightly greased casserole. Fry 6-8 slices bacon, cut in small pieces, lightly and then cut up 1 or 2 onions and fry lightly with the bacon grease. Pour all of this mixture over the top of the sliced potatoes and sprinkle parsley over top. Bake, uncovered, at 350 degrees F for 30 minutes.

Olive oil will work also. I may also use minced garlic and also add sliced onions or carrots sometimes.

Sometimes I will add parsley or basil or oregano or whatever other spices I feel like at the time. My sister adds dill to hers.

I mix my sliced potatoes with all the oil and spices in a large bowl, tossing to coat everything. Then I dump everything onto a foil lined cookie sheet and bake, turning them once to brown the edges.
