I am responsible for a teacher luncheon that will be serving 250. We ask for donations from the school's community. I use a sign up website to post the donations and to keep from getting too much of one thing. In the past I have found that people are too busy to cook; and would like to be told what to bring. What kind of food can I ask for that would be easy and make a nice presentation? Appreciate any comments.

If it doesn't have to be too formal, you could do a sandwich, soup and salad buffet. You could ask community members to bring fresh rolls, deli meats and cheeses (you could even ask for deli tray contributions), condiments, fresh (sliced) fruit and desserts. These are all things they can buy if they don't want to cook.
For those who might not mind cooking, you could also ask for 1 or 2 certain types of soup (so they can be combined, you might even want to provide a simple recipe).
Mexican Stack-it is very popular in our area. All of the ingredients are set out in separate dishes. As you go through the line you build your own dinner.
Things that go well together are:
tortilla strips/chips
ground meat, browned with taco seasoning.
shredded lettuce
guacamole
cheese
diced tomatoes
chopped green onions
picante sauce
chili beans
Stack it on starting with the chips.
Then add fruit and desserts and drinks.
Prepared food trays from grocery stores.
They have fruit, veggies, tortilla wraps, croissant sandwiches, cut up hoagie style sandwiches.
People can purchase these trays for $10 - 20 dollars and bring it.
Also, they can pick up fried chicken and jo jo's from the supermarket hot deli and bring it.
I'm on a school board and just went to a teacher (and board) appreciation luncheon yesterday. There were several types of breads and all the fixings for sandwiches. also cut up vegies and dips, sun chips, a variety of salads including fruit salad, desserts, and beverages. All very good, although making sandwiches ourselves was a bit time consuming, so I would suggest perhaps having silver dollar rolls buttered and have a stack of ham sandwiches and a stack of turkey sandwiches, with cheeses, mustard and mayo available to add.
