Diamond Post Medal for All Time! 5,887 Posts

Ingredients:

  • 5 Tbsp. butter or margarine
  • 1/2 tsp. liquid artificial sweetener
  • 2 eggs
  • 1/2 cup raisins
  • 1 cup flour
  • 1/2 tsp. baking soda
  • Advertisement

  • 20 dates
  • 1/2 cup walnuts

Directions:

Combine butter, sweetener and eggs, beating until fluffy. Soak raisins in enough boiling water to cover. In a separate bowl, sift flour and soda. Add dates and walnuts to the flour. Then add drained raisins, reserving the liquid. Add the flour-fruit mixture to the egg mixture alternately with enough of the raisin juice to make a soft batter. Bake on greased cookie sheets. Bake at 375 degrees F for 10-12 minutes.

This would be an awesome recipe except for the artificial sweetener. I would suggest you use stevia instead. Much sweeter and way more safer.
