Use for Leftover Mashed Potatoes?

I'd like a recipe (something other than Shepherd's Pie) to use up some leftover mashed potatoes. Thanks.

Hands down, one of the best things to do with left over spuds!

POTATO FUDGE

3 squares (3 oz) unsweetened chocolate
3 tablespoons butter
1/2 cup unseasoned, mashed potatoes (at room temp)
1 teaspoon vanilla
1/4 teaspoon salt
3-3/4 cups (1 pound) powdered sugar
2 teaspoons milk or soy milk
Almonds, finely chopped

Melt chocolate and butter together in a saucepan over low heat, stirring occasionally.
Remove from heat and stir in mashed potatoes, vanilla, and salt.
Sift powdered sugar into large bowl.
Add chocolate mixture and mix well. Mixture will be slightly dry and crumbly.
If necessary, add milk to make a dough that can be kneaded.
Turn out on a board and knead until smooth.

Dust board with powdered sugar if necessary.
Shape mixture into two rolls, about one inch in diameter.
Roll in chopped almonds.
Wrap in wax paper and chill.
Cut into 1/2 inch thick slices.

Makes 4 dozen.

Quick hearty potato soup
serves 4
Warm (about) 2 cups of milk. add 2 1/2 - 3 t. boullion powder, salt, pepper, garlic powder to taste. Add any herbs you like. You can alsoadd and melt some cheese at this stage. Add up to 1 c. leftover mashed potatoes. Blend all & warm to desired temperature. Pour into serving bowls & top with a pat of butter, a little paprika, a dusting of pepper (?)

You can make this as thick or as thin as you like. You can make an easy children's meal this way by adding a little crumbled meat or sliced hot dogs and some veggies.

Mix leftover mash with shredded cooked cabbage and onion make into little patties and fry in a little oil until brown. Serve with meat or burgers.

In Finland mashed potatoes are used in doughs to make bread. The bread comes out really moist, filling and delicious! I don't have a recipe, but you could just try to make a dough with liquid, yeast and mashed potatoes, then add as much flour (preferably rye) to make the consistency right.

When fixing creamed potatoes, I prepare enough to have some left over for supper the next night. I put grated extra sharp cheese on top, and heat it in the toaster oven.

My son always wanted the KFC chicken bowl. So I made it at home! Layer mashed potatoes, a couple of chopped up fried chicken tenders, corn around the edges, put some country gravy on top and sprinkle with cheese. Serve with a roll or biscuit. He loves it and it takes hardly any time!

I would say potato pancakes but mine never come out quite right. Maybe someone else has a good tip on those!

My dad would make potato pancakes for breakfast from last night's mashed potatoes. Just mix in one beaten egg, form into small patties and pan fry in butter til golden brown. Yummy!

I put dollops of the mashed potatoes on a cookie sheet, put the cookie sheet in the freezer until the dollops are frozen, then slide them into a ziplock bag to keep in the freezer. When I need a side dish, I pull out several of the dollops of mashed potatoes, put them on the cookie sheet, pop them in the oven, and bake until they're cooked through. I think I use a 350-degree oven for probably about 20 minutes or so, but I've never actually timed it.

I put a little butter in a frying pan and scoop potatoes in spoonfuls into the pan. Let it sizzle and flip them after a minute or two then sizzle on the other side. Take them out and they make the best crispy potato pancakes.

My dad fries onions and gets the pan brown first, it adds the best flavor to the potato pancakes and they taste great beside flounder or steak. I am going to try the other suggestions here too. Can't wait. They sound delicious. Be blessed friends <><

I like to make hotdog boats with leftover mashed potatoes. What you do is slice uncooked hot dogs in half longways and stuff them with the potatoes. Sprinkle with cheese and bake them in 350 degrees oven for at least 15 mins. It's very good and if the hot dogs are on sale, it's a very cheap dinner, too.

I like to just toss mashed potatoes into a soup or stew. It gives it more "body" and a creamier texture.

My husband likes to put mashed potatoes in between two pieces of bread with some sandwich meat or some cheese and he eats his "mashed potato sandwich".

I've seen several recipes where you make meatloaf, scoop a trench down the middle and put your mashed potatoes in the trench. I'm sure if you check the cooking sites, you can find several like that. I also remember having dinner at a friend's house when I was little. Her mom cooked the meat loaf in cupcake pans. She 'frosted' the little meatloaves with mashed potatoes and put a dollop of mashed potatoes on top. There was gravy in a bowl if you wanted to put some on top of the meatloaf cupcake. You could also sprinkle cooked veggies over it all like decorations.

My mother always made what we called "bullets" with leftover mashed potatoes. Combine potatoes with ground meat, onions and an egg. Thoroughly mix. Form into pattie shapes, dredge in flour and pan fry. Always a winner in our house.

I make potato candy with just a spoonful of leftover mashed potatoes that I hate to throw out. I add a little butter and a few drops of vanilla flavoring and a sprinkle of salt.Then I mix in enough powdered sugar to make a soft dough that can be rolled out. The potatoes will get runny when you add the first powdered sugar, but keep adding more and it will thicken and make a dough. Roll the dough out on a poiwdered sugar surface and spread it with peanut butter. Roll up like a jelly roll and chill. Slice in thin slices after it is cool and enjoy.

I love making spinach and potato pancakes. take about 2 cups leftover mashed potatoes, 1pkg frozen spinach (thawed and squeezed dry), 1 egg, 1/2c flour, 1/2tsp onion powder(or grate some fresh onion), 1/4tsp garlic powder(or grate some fresh), salt and pepper to taste. Mix well and brown in a little olive oil. Bout five min. each side. yum! also u can make potato, ham and corn chowder. Just add chicken broth, a can of creamed corn, cubed ham and minced onion to your leftover mashed potatoes. comfort food!

I always plan for leftovers of mashed potatoes. I sometimes cook 5 pounds at a meal, then take the leftovers and put about 2 cups in a sandwich size Zip Lock Bag. close the bag up except for one corner. Flatten the mashed potatoes, letting the air escape from the open corner. Then seal the bag and label it ( a Sharpie works well for this) and pop it into the freezer. For a quick meal with mashed potatoes, just thaw a bag and put them in a bowl. Microwave about 5 minutes, Remove from the microwave and whip them up with a fork. They will look and taste like freshly made mashed potatoes. Whenever my potatoes start to sprout, I cook them up and freeze them in this manner.

We make potato pancakes just by using scoops of left over mashed potatoes and making them into patties which we salt and pepper and roll in flour and fry in bacon drippings.
Another use is potato salad. We always start with mashed potatoes and it is so much more flavorful than boiled cubed potatoes as it has the butter and milk, salt and pepper already there. Just add some minced onion and sweet pickles, a bit of the sweet pickle juice, mustard and Miracle Whip to taste.
Very good stuff.
Oh, I forgot to say a few diced boiled eggs in the potato salad.

I recall a recently posted pasta piroghie shells found under the pasta section of our ThriftyFun recipe website. The recipe called for frozen mashed potatoes, but you could surely substitute homemade instead. Jumbo stuffing shells are filled with mashed potatoes and cheese mixture. I would also saute a generous amount of onions in real butter and pour over the finished product!

There is a Norwegian Potato pancake called Lefse that my grandmother made. I don't have the recipe, but I am sure you could google it. It was potatoes, eggs, flour, salt -- I think that was it, but I don't know the amounts. It was rolled out thin like pie crust and baked on the top of the wood stove. You could use the frying pan!! We ate them rolled up with butter; other people put cinnamon and sugar on them.

Mashed potatoes freeze well. I never thought about this until I saw mashed potatoes for sale! I said I can do that myself!
