It would kind of depend on the type of fruit, the particular people that will be at the event, etc. I imagine if you google the question you could find out. Also some cookbooks have that type of information in them.

There really is no exact method to figure this out. But 2 factors to consider is if this is the only dessert they will have or if there will be other choices. The other is how long it will be served for. For example, each person may have one piece if there are other choices to eat. They may have 5 pieces if there is nothing else. Then is is a 1 hour time period or 3 hours?

The bad thing about chocolate dipped fresh fruit is that it has to be made the same day and it's not like if you make too much it can be saved. A little way around this is to also use some dried fruits, if you can. Like dried apricots, etc. They can be dipped the day before and definitely don't take as much time to prepare. Don't know if you will be at the event, but you can also keep some dried fruit in the kitchen and put more out if needed.

I have dipped fruit in chocolate and frozen them for use with a large group. I find fruit that has a firm consistency work well for this, such as pineapples, orange wedges, strawberries, and the like.
