Light and refreshing, Goes with many different entrees
Dice all vegetables into smaller pieces, add cilantro, and basil.
Heat olive oil and lemon juice on medium-low. Add the diced vegetables. After vegetables are tender (about 5-10 minutes) add seasonings into Fry pan with veggies then turn heat off.
Stir honey mustard and mayonnaise into tender seasoned vegetables; cover and remove from heat.
Serve chilled or room temperature.
Note: Be careful to cook vegetables on medium low heat.

I can't go a day without this salad. It's fast, yummy and super good for you.
Pkg of Coleslaw (I like the one with some red cabbage and carrots. It's $2.38 at Walmart.)
Pour Poppyseed Dressing (Briana's from Walmart has all healthy ingredients) to taste.
Add a handful of salted peanuts. Mix and enjoy!
