Carnitas and Guacamole Tapas

Delicious, can never go wrong!

Ingredients:

  • 2 canister of already made pizza dough from Pillsbury

Carnitas:

  • 3 lbs. Pork Butt, remove 1/2 of the fat

  • 1 1/2 cups orange juice
  • 2 1/2 Tbsp. Mexican adobo seasoning
  • 2 1/2 Tbsp. garlic powder
  • 1 1/2 Tbsp. black pepper
  • 1 lime
  • 1/4 cup Coke
  • 1/2 cup olive oil (saved for the last step)

Guacamole:

  • 3 Large Haas avocado
  • 1/4 cup Queso cheese, crumbled
  • 1 Fresh jalapeno pepper, diced
  • 1 onion, diced
  • 1/2 bushel of cilantro, diced
  • 1 1/2 fresh limes, squeezed for the juices
  • 1 tsp. of salt

Directions:

Carnitas:

Set aside a crock pot or a large pot. Season the pork butt with Mexican Adobo Seasoning, Garlic, and black pepper. Massage seasoning into the pork butt. Place the pork butt into the crock pot and add 1 freshly squeezed lime, coke, and orange juice. Cook in crock pot for 3 to 4 hours, or until the meat is fully cooked.

After it has been completely cooked, remove the pork onto cookie sheet and let it sit for 10 to 15 minutes. Shred the meat all around the cookie sheet and drizzle olive oil all over it. Add More adobe seasoning, salt, or black pepper if needed. Place the meat into the oven at 400 degrees F for about 12 minutes until the meat begins to crisp.

Remove the tray from the oven and the carnitas is ready.

Guacamole:

Peel 3 Large Haas avocados and remove the pit. Place the Avocados into a large bowl and set it aside. Dice onion, cilantro, and jalepeno pepper; add it into the bowl with the avocados. Squeeze 1 and 1/2 fresh limes into the bowl. Add salt. Crumble in Queso Cheese into the bowl. Take a spoon or a spatula and mash everything together. Once the texture is smooth, it is ready

Pizza Dough Disc:

Grease a cookie sheet. Unravel the ready made Pizza dough from Pillsbury. Cut the dough into thin disc shapes and place them on the cookie sheet. Set oven to the degree provided on the directions. Drizzle some olive oil on each disc and let it bake until golden brown, about 10 minutes. Set it aside for about 8 minutes and it is done

On each dough disc, add some carnitas, and some guacamole. It is ready to serve and eat.
