Mexican Casserole

Great flavor, no left overs on this one.

Ingredients:

  • 1 lb. ground beef
  • 8 oz. jar salsa (hot, medium or mild), brand of choice
  • 1 can re-fried beans, brand of choice

  • 1 pkg. taco seasoning mix, brand of choice
  • 8 oz. sour cream
  • 1 pkg. Mexican style shredded cheese
  • 1 bag tortilla chips

Directions:

Brown ground beef until no longer pink, drain, add taco seasoning mix, following package directions. Add re-fried beans and salsa, stir. Remove from heat, put into a 2 quart casserole dish. Dollop sour cream in mounds on top of mixture, swirl sour cream with spoon into mixture, don't over mix. Cover top well with Mexican style cheese.

Bake in 350 degree F. oven for about 20 minutes or until hot and cheese is bubbly. Serve with tortilla chips. served with a salad this dish makes a complete meal. Recipe can be doubled. Low fat substitutes for ground beef (90% lean), sour cream, re-fried beans (fat free type) and low fat cheese will reduce fat content.
