Making Candy When It is Raining

When the holidays get closer many people like to make candy. One tip that is very important, and depends much of the time on the climate where you live, is to not make candy if it's raining outside. Extra moisture in the air will not let it set up or harden the way it is supposed to.

I know this is an old post but it reminded me of a time early in my marriage (34 years ago) when I made divinity for the first time. We lived in Mississippi and it rained quite a bit. I beat that stuff until I burned up my new mixer and it never did set up. We finally ate it with a spoon! I didn't have anybody to ask what was wrong so I didn't make divinity for about 20 more years. Sure have learned a lot about cooking since those days!
