Preventing Gas in Beans

Fresh ginger root is a miracle. I use it in so many ways. One of the best uses is to put several slices into the soaking water for beans. It prevents the gas formation better than the commercial products. Toss it out when the beans are ready to cook then add a few more slices while the beans are cooking.

Fresh ginger can be kept by filling a quart jar filled with 2/3 white wine and 1/3 water covered in the fridge.

When you keep ginger in the fridge do you slice it first or just put the roots in the wine/water?

Little confused by the words. Do you mean that it helps keep people from getting gas when they eat the beans? If so, that would be a miracle! My son has one of the worst problems I've ever seen, I'd really like to try it if it works. Doesn't it make the beans taste like ginger though? Thanks!

Been using Ginger for years in dry and fresh beans , actually it doesn't change the taste but enhances it .

To prevent gas formation from dried beans, add fresh ginger slices to the soaking water. Discard the water and ginger before cooking. Also helps to add new fresh ginger slices to the cooking water. (adds a nice snappy taste also).
