Mustard Vinaigrette

Most of us have these items readily available in our kitchen :-) This recipe is a healthy, tasty alternative to bottled dressings that are expensive and that contain a lot of added chemicals

Yield: 12 lightly dressed salads.

Ingredients

  • 2 tsp. Dijon Mustard
  • 2 tsp. red wine vinegar
  • 2 Tbsp. extra-virgin olive oil (for a lighter flavor use vegetable oil)
  • 1/2 tsp. water
  • Salt and pepper to taste

Directions

Place mustard in to a small bowl, slowly whisk in vinegar, slowly whisk in oil. Add water, salt and pepper and slowly whisk a bit more.

The slow whisking makes for a creamier dressing rather than a dressing that separates in to oil and vinegar.
