Simmered Garbanzo Beans and Tomato With Basil

Ingredients:

  • 1 Tbsp extra virgin olive oil
  • 1/2 onion, thinly sliced
  • 2 tsp. minced garlic
  • 1 can (15 1/2 oz.) garbanzo beans, drained and rinsed

  • 1 can (14 1/2 oz.) diced tomatoes, not drained
  • 1/4 cup fresh basil, thinly sliced
  • Salt and pepper to taste

Directions:

Heat oil in a skillet over medium heat. Add onion and garlic cloves and cook, while stirring, until onion begins to soften, about 5 minutes. Add garbanzo beans and diced tomatoes. Simmer until thickened but still saucy, about 6 to 8 minutes. Remove from heat, season with salt and pepper, stir in the basil, spoon in to serving bowls, and enjoy.

Deeli, I LOVE your recipes! Many of them are very simple, but make use of interesting flavors and veggie combinations so they turn out really special. I think you should consider writing a book :-) Thanks for taking the time to share.

Make that 3 books. I'll buy one too, Deeli.

You really do share a lot of good recipes. Do you just dream them up, or are they old-family favorites, or from another printed source. Anyway, you have a knack of picking and choosing that is really great.

There are some super-good cooks on this list, and I've learned so much, and gained a lot of confidence about trying new recipes.
