Cook Two Casseroles

When making a casserole, double the ingredients and make two. Cook one and store the other in the freezer. Cover the casserole in plastic wrap and then aluminum foil before freezing. Use a marker to write the date on the foil. You can re-use the foil to cover the casserole when cooking it. Casseroles can be frozen for 3 months.

You might want to wrap the casserole with the aluminum foil first, and THEN wrap with plastic. Otherwise, you might forget the plastic was there and melt it!

If your casserole has tomato sauce or tomato based sauce on top, please do not put foil on it first. The tomato sauce will eat through the foil.

I lost a couple of enchilada casseroles by putting foil on first.
