Pastel swirled marshmallows in various shapes.Here is a super simple way to make your own marshmallows at home. They are so much better than the store-bought variety and no corn syrup is added.

Dust an 8 or 9 inch cake pan with some powdered sugar. Set aside.

Toast flaked coconut by placing on a baking sheet in a 350 degree F oven. Stir often for about 10 minutes. I use my toaster oven!

In a small bowl, soak gelatin in 4 tablespoons of cold water. Set aside.

Combine granulated sugar and 1/4 cup of water in a large heavy saucepan. Cook and stir over medium heat until dissolved. Add gelatin and bring to a boil. Remove from heat. Pour into a large mixing bowl and let stand until partially cool.

Add salt and vanilla extract. Beat with an electric mixer until soft peaks form and it doubles in volume, approximately 10-15 minutes.

Pour into prepared pan and set to cool until it doesn't stick to your finger when you touch it.

Cut into 1 inch pieces and roll in powdered sugar and/or toasted coconut. My photo shows both variations. Enjoy!

Does anyone out there know how to make marshmallows? On qvc this morning they were selling a cookbook and said you could make your marshmallow for pennies! I thought that would be fun for the grandkids!

I found this:

To make marshmallows at home, combine 3 tablespoons of gelatin (a professional-grade concentrated gelatin would be a good choice, but generally is available only to the food industry) with 1/2 cup of cold water and let it stand for an hour. In the meantime, heat 2 cups of sugar, 3/4 cup light corn syrup, 1/2 cup of water, and 1/4 teaspoon of salt. Bring it to a boil and cook until the firm-ball stage (244°F; 117°C). Remove from the heat and pour it slowly over the gelatin, beating it constantly in a stand mixer.

Beat it for a good 15 minutes. When its thick but still warm, add 2 tablespoons of vanilla or other flavoring (mint, strawberry, orange, flower water, etc.), if desired. Spread the mixture in a pan that has been lightly dusted with cornstarch. Let it dry for 12 hours, then cut it into squares with scissors dusted with cornstarch, and store them in an airtight container.

Homemade Marshmallows

Makes about 40
Marshmallows were originally made from the root of the marshmallow plant; today, corn syrup and sugar are the main ingredients. Homemade ones can be cut into any shape you like.

2 1/2 tablespoons unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon salt
2 tablespoons pure vanilla extract

Confectioners' sugar, for dusting

1. Combine gelatin and 1/2 cup cold water in the bowl of an electric mixer with whisk attachment. Let stand 30 minutes.

2. Combine granulated sugar, corn syrup, salt, and 1/2 cup water in a small heavy saucepan; place over low heat, and stir until sugar has dissolved. Wash down sides of pan with a wet pastry brush to dissolve sugar crystals.

3. Clip on a candy thermometer; raise heat to high. Cook syrup without stirring until it reaches 244° (firm-ball stage). Immediately remove pan from heat.

4. With mixer on low speed, slowly and carefully pour syrup into the softened gelatin. Increase speed to high; beat until mixture is very thick and white and has almost tripled in volume, about 15 minutes. Add vanilla; beat to incorporate.

5. Generously dust an 8-by-12-inch glass baking pan with confectioners sugar. Pour marshmallow mixture into pan. Dust top with confectioners sugar; wet your hands, and pat it to smooth. Dust with confectioners sugar; let stand overnight, uncovered, to dry out. Turn out onto a board; cut marshmallows with a dry hot knife into 1 1/2-inch squares, and dust with more confectioners' sugar.

Real Marshmellows used to be made with Marshmellow which I believe is the root of a plant. This is the recipe that I would Love to find.

* 300g (1 1/4 Cups) sugar
* 125 ml (1/2 Cup) water
* 4 teaspoons gelatine
* 125mls (1/2 Cup) hot water
* 1 teaspoon vanilla essence
* food colouring (optional)

Method
Mix sugar and water together. In a separate bowl (or cup) add gelatine to hot water. Stir until all the gelatine is dissolved. While still hot, add to the sugar mixture and beat until thick and white (approximately 10 minutes). Add vanilla essence and a few drops of food colouring if desired. Put into slice tray and allow to set. Cut into squares and coat each piece with coconut.This makes a great party food that kids will love.

Homemade Marshmallow Cream

Adapted from Unknown

7 servings
2 cup granulated sugar
1 cup egg whites
1 cup water
1/2 c corn syrup
2 c corn syrup
4 tsps pure vanilla extract

Cook sugar, water and two cups corn syrup to 240 degrees. In mixing bowl, beat egg whites and half cup corn syrup until mixed. Beat by hand until light and fluffy. Slowly add hot syrup while beating. When all is mixed beat hard for three minutes. Add vanilla extract.

Emeral has a fantastic reciept and it's easy and you can add any extract you like. I used pepper mint and it was great.
