Generally you don't eat the peel on a kiwi. When peeling it you want to lose as little of the fruit as possible. This is a guide about peeling kiwifruit.

I slice off the ends and work a teaspoon under the peel and go around. It does take a little practice to get it right, but well worth it for the Kiwi you save.

When I have kiwi, I either use a potato peeler or scoop it with a spoon. Which ever is your preference.
