July 15, 2011
Spaghetti on PlateIt is always very hot where I live when the tomatoes and peppers are ripe, so I constantly seek out crock pot recipes. Here is one I use for spaghetti sauce.

Ingredients:

  • 4 onions, chopped
  • 2 Tbsp. dried basil
  • 4 minced garlic cloves
  • 2 chopped, seeded bell peppers
  • 1/2 cup olive oil
  • 16 cups (5 lbs.) chopped tomatoes
  • 2 Tbsp. dried oregano
  • 1/4 cup chopped parsley
  • 1/4 cup white sugar
  • 2 Tbsp. salt
  • 3/4 tsp. black pepper

Directions:

Dump and stir! I use a 6 quart pot. Low for 7 1/2 hours. If it needs thickening, I add 1 small tomato paste towards the end.

Source: I found this at allrecipes.com and have played with the recipe several times, but this is the basic version that I love.

I love using crock pots and developed this way of cooking Italian food when I was working. I put a can of spaghetti sauce in a crock pot and then add either Italian sausage, chicken, or beef such as London broil.

Does anyone have the crockpot spaghetti sauce recipe that was in the booklet packed with the Crockpot in the mid-1970s?

Here's a recipe from the Crockpot Cookbook that came with the crockpot. I received this crockpot as a gift in 1976 and am still using it! It's a Rival model 3150, 3 1/2 Qt.

I couldn't find a spaghetti sauce recipe in the book but this one is called Italian Meat Sauce. Maybe it's the one you're thinking of?

Italian Meat Sauce

1 c. chopped onion
1 - 1/2 lbs. ground chuck, browned
2 cloves garlic
1 large can tomatoes (1lb 12oz)
1 6oz can tomato paste
2 stalks celery, with tops, chopped
2 tsp. salt
3 tsp. dried oregano
1/4 tsp dried thyme
1 bay leaf

Put all ingredients in crockpot. Stir thoroughly. Cover and cook on Low 10 - 12 hrs or High 3 - 5 hrs.

Ingredients may be increased by half for the 5 Qt model.

Hope that helps you.
