Preheat oven to 225 degrees F. Remove skin from the chicken. Place chicken in pan with fat portion up. Mix sauce ingredients and spoon 1/3 of the sauce on the chicken and bake for 2 1/2 hours.
I substituted chicken bouillon for the beef bouillon once and liked the change of flavor.
Grilled Bananas with Ice Cream
I haven't tried making these using the broiler yet, but I can't imagine they wouldn't be as good cooked that way during non-grilling months too. Halve each of the bananas lengthwise and then width-wise. Sprinkle bananas with lemon juice.
This is a nice change from an ordinary slice of cake. Cut 12-18 12-inch squares of heavy-duty foil; set aside. Cut 1-inch slice from top of each orange. Scoop out orange fruit and pulp. Leave peel intact as a baking cup. Prepare cake according to package directions.
You can roast these reds on the grill too! Just place evenly, spread, and completely enclosed in tin foil.
An unusual way to serve meatloaf. Cut six 12 x 14 inch rectangles of heavy-duty foil; set aside. In a medium bowl, mix ground beef, egg, cracker crumbs, tomato sauce, pepper, salt, and dry mustard. Set aside.

Lightly oil the grill and preheat to medium heat. Slice off the top of each tomato and use a spoon to hollow out the seeds and watery juices. Sprinkle the inside with pepper and rub olive oil on to the outside of the tomatoes, coating well.
I love this sauce. It can be used with Pork, Chicken, Spareribs, Meatloaf, Stews, Hamburgers - anywhere you would use ketchup or barbecue sauce. It will keep in an airtight container in the refrigerator for about one week and will keep in the freezer for up to one month.
When camping in the summer, it is too hot to fire up the oven to cook when in a camper. I like to put my meat and veggies in a foil pocket and cook them over an outside grill.

This is my favorite way of cooking ribs, chicken, and brisket, in the summer when it's too hot to fire up the oven. I can also cook ahead and freeze meats for the winter. It sure tastes good on a blustery winter day in Oklahoma!
