Oat Bran Applesauce Muffins

The muffins are low-fat and delicious.

Ingredients:

  • 1/2 cup brown sugar, packed
  • 1 1/2 cup Oat Bran Hot Cereal
  • 1 1/2 cup unbleached white flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs or 4 egg white (for low-fat recipe, use only egg whites)
  • 1 cup applesauce, chilled (I prefer the jar applesauce with cinnamon)
  • 4 Tbsp. vegetable oil

Directions:

Preheat oven to 400 degrees F. Line 12 muffin cups with paper liners or grease muffin cups. I spray muffin cups with vegetable spray and fill until there is only about 1/4"- 1/2" from the top.

Blend together dry ingredients. Add eggs, chilled applesauce and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.

Bake 15 minutes or until golden brown.

Makes 12 muffins. Each muffin: 207 calories; 4 g. dietary fiber; 35 g. carbohydrates; 6 g. protein; 7 g. fat; 1 g. saturated fat; 35 mg. cholesterol; 319 mg. sodium.

Note: If you can't find oat bran hot cereal in the cereal isle make your own. Using a food processor, pulverize oat meal until it looks like the consistency of oat bran. Also make your own brown sugar.

Applesauce and Molasses Bran Muffins

I recently returned from a vacation that included time spent at Knottsberry Farm and their hotel in California. In the morning my husband and I went to the breakfast buffet in their restaurant. One of the flavors of muffins was bran. I have never tasted such wonderful bran muffins. I inquired as to what made them so moist and was told that they had applesauce and molasses in them. Would any of you readers have a recipe for bran muffins including these 2 ingredients. If so, would you kindly share it with me?

Muffins with Applesauce, Bran and Yogurt

Ingredients:
  • 5 cups Flour
  • 4 cups buttermilk
  • 3 cups sugar
  • 4 eggs
  • 1 20oz Raisin Bran
  • 2 tsp soda
  • 1/2 cup oil
  • 1 cup applesauce
  • 1 cup yogurt
Directions:

Mix ingredients together and bake in greased muffin tins for 20 minutes at 350 degrees. These will also FREEZE well.

Applesauce Muffins

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 cup applesauce
  • 2 cup flour
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup chopped nuts (opt.)

Directions

Preheat oven to 400 degrees F. Line 12 muffin cups with paper liners, or lightly grease bottoms only. In large mixing bowl, beat together butter and sugar at medium speed of electric mixer until well blended. Blend in egg and applesauce. In medium bowl, combine flour, cinnamon, nutmeg, baking soda and salt. Add to butter mixture; mix well. Stir in nuts, if desired. Spoon batter into prepared muffin cups, filling each cup 2/3 full. Bake 25 minutes or until golden brown.
